What you will need:

1.     2 egg whites

2.     1 tablespoon canola oil

3.     1/2 cup fat-free milk

4.     1/2 cup all-purpose (plain) flour

5.     1/2 cup buckwheat flour

6.     1 tablespoon baking powder

7.     1 tablespoon sugar

8.     1/2 cup sparkling water

9.     3 cups sliced fresh strawberries

 

Directions

  • Whisk together the egg whites, canola oil and milk in a small bowl.
  • Combine the flours, baking powder and sugar. Add the egg white mixture and the sparkling water and stir until slightly moistened in another bowl.
  • Place a nonstick frying pan or griddle over medium heat. When the pan is hot enough, spoon 1/2 cup pancake batter into the pan. Cook until the top surface of the pancake is covered with bubbles and the edges are lightly browned, about 2 minutes. Turn and cook until the bottom is well-browned and the pancake is cooked through, 1 to 2 minutes longer. Repeat with the remaining pancake batter.
  • When plating the pancakes on individual plates, top each pancake with 1/2 cup sliced strawberries.

 

**Tip: Instead of maple syrup, top these pancakes with sliced strawberries or other types of fresh fruit such as sliced bananas or peaches.**

 

FRESH FRUIT SMOOTHIE

Another great way to get needed vitamins and nutrients into your loved one’s diet is with a fruit smoothie.

 

What you will need:

1.     1 cup fresh pineapple

2.     1/2 cup cantaloupe or other melon

3.     1 cup fresh strawberries

4.     Juice of 2 oranges

5.     1 cup water

6.     1 tablespoon honey

 

Directions

  • Remove rind from pineapple and melon and cut into chunks. Remove stems from strawberries.
  • Place all ingredients in blender and puree until smooth.
  • Serve cold.
